Cauliflower is an essential part of the cruciferous vegetable family, which includes Brussels sprouts, kale, cabbage, and broccoli. The word comes from the Italian “cavolfiore,” which means “cabbage flower.” It’s the flower buds that are edible.
When it matures, the cauliflower becomes clear white and can grow up to 20 centimeters. Besides white, cauliflowers also come in orange, green, and purple.
